按总醇量测定法(OT-5)测定。皂化时准确称取乙酰化乙醇1.2g。计算中的当量因子(e)取110.2。由此求得以檀香脑计的醇含量。

毒性
LD₅₀(大鼠，兔子)@＞5.0g/kg。

使用限量
FEMA(mg/kg)：饮料2.4；冷饮7.5；糖果7.7；焙烤食品6.6；胶姆糖47。
适度为限(FDA§172．510，2000)。

化学性质
淡黄至黄色微粘状挥发性精油，具有强烈持久的特征性木香气。溶于乙醇、大多数非挥发性油、丙二醇和矿物油中，有时可出现浑浊，不溶于甘油和水。

用途
我国GB 2760—96规定为允许使用的食用香料．

生产方法
由檀香科植物白檀香，亦称东印度檀香(Santalum album)的地面根部和木质部经干燥并水蒸气蒸馏而得，得率约4%。主要产于印度，我国亦有少量引种。
